• Chocolate Making Workshop in Madagascar •
From the tree to the chocolate!
Discover the secrets of cocoa
A culinary and cultural immersion
Take part in the making of chocolate from A to Z and contribute to the development of the cocoa industry in Nosy Komba.
Detailed programme
Cocoa was introduced to Madagascar at the beginning of the 20th century by French settlers, adapting perfectly to the local climate. Production represents only 0.4% of world demand. However, Madagascan cocoa is an exceptional cocoa!
It is grown without fertiliser in a soil that produces an endemic flora. It is not surprising that the taste of cocoa is unique: intense and round in the mouth. The moderate bitterness is unusual and reveals citrus flavours with fruity final notes reminiscent of raspberry or strawberry. The aroma is also very distinctive.
Organised by the local association Akiba, in the company of Malagasy farmers, you will discover all the stages of chocolate making:
- Pruning and harvesting of pods
- Dehulling (recovering the beans and their mucilage by getting rid of the placenta) and fermentation
- Drying of the beans
- Roasting and conching
- Preparation, tempering and moulding of the chocolate
The local association: The Akiba association promotes and supports sustainable development activities in Nosy Komba (North-West of Madagascar). Its values are the protection of the environment, the sharing of knowledge, the respect of traditional knowledge and the opening to the world.
Its areas of action are :
⦁ EDUCATION: A bush school with 70 pupils divided into 4 classes, whose early-learning activities are centred on nature.
⦁ AGRICULTURE: Farm cultivated by the local population. The farm's products are promoted through a mixture of tradition and agro-ecological innovations.
⦁ ENVIRONMENTAL PROTECTION: Preservation of fauna and flora, planting of endemic species and awareness of ecological issues.
